Ingredients

  • 1/4 cup extra virgin olive oil
  • 2 Tablespoons Balsamic vinegar (I recommend a peach balsamic for extra sweetness and flavor)
  • 1 teaspoon yellow mustard
  • Salt and pepper to taste
  • 1/2 cucumber, finely diced into little cubes
  • 1/4 of a red onion, finely diced
  • 1 orange, diced (Cara Cara oranges are highly recommended!)
  • 1 large ripe avocado, diced
  • 3/4 cup (approx. 4 oz.) pine nuts
  • 4 oz. Goat cheese, crumbled into chunks
  • 3 oz. Arugula, or a few big handfuls

Instructions

  1. In a large bowl, combine the olive oil, vinegar, mustard, salt and pepper. Whisk together until well combined.
  2. In a dry skillet over medium heat, toast pine nuts, stirring frequently, until golden and fragrant (about 2-4 minutes). Watch carefully to prevent burning.
  3. To the bowl with the dressing, add the diced cucumber, red onion, avocado, orange, toasted pine nuts, goat cheese, and arugula.
  4. Toss all the ingredients gently but thoroughly to ensure everything is evenly coated with the dressing.
